Sublime Bakery Pastry Chef and Owner Catherine Ruehle

Pastry Chef Catherine Ruehle likes a good challenge. A 5 foot tall STAR WARS themed wedding cake? No problem. A psychedelic 60's cake with a live goldfish swimming between the tiers? She can do that too. A birthday cake for a child with extensive food allergies? Bring it on. Catherine's greatest joy comes from bringing her clients' dreams to life- in cake!

 

Catherine credits her first restaurant boss and mentor, Chef Michel Nischan, with giving her the "big break" that turned a self-taught baker into a bona fide Pastry Chef. At Nischan's restaurant, Miche Mache, in Connecticut, her artistic eye and flair for innovative flavor combinations won a rave review from The New York Times.

 

After Miche Mache, Catherine worked all sides of the food industry, including catering, restaurant management, cookbook publishing, and recipe development and testing. The 15 years experience combined with a life-long love of baking and a degree in Art History finally culminated in her dream job as Pastry Chef and Cake Designer.

 

In 2008, Catherine launched Sublime, a retail bakery and cake studio in Fort Worth, Texas. The eclectic shop features exquisite custom cakes, special-order desserts, and Cake Decorating Lessons. Sublime also offers a line of vegan, gluten-free, and sugar-free items.

 

In it's very first year the Bakery was awarded the "Best Birthday Cake", "Best Bakery", and "Best Cupcakes" honors by Fort Worth, Texas magazine. Chef Ruehle and Sublime Bakery are frequently featured in the local, regional and national media. Chef Ruehle is currently developing and testing recipes for her first cookbook, and is teaching privately as well as at Central Market Cooking Schools. She recently filmed her fourth episode of Food Network Challenge, and her work has appeared on many national television programs including Get Married, Whose Wedding is it Anyway, and My Fair Wedding with David Tutera.

 

When she's not working, Catherine can be found spending time with her husband Van and their two sons, Cade and Case.
